The Truth About a High Fat Raw Food Diet

What if I came to you and said,

“I have the absolute best diet in the world. You will lose weight, you will have more energy, and you will prevent and even reverse any and all diseases. AND you get to eat 60% OR MORE of your calories from fat!”

You would probably a) laugh in my face, b) turn and run, or c) ask if I was a raw foodist.

That’s right, folks. The average raw foodist eats 60% of his or her calories from fat! That’s over HALF of one’s daily calories, all from fat!

Are you surprised? I know I sure was when I went raw. I could not believe that there were people actually promoting a high fat diet when all the evidence for a healthy diet pointed to the exact opposite!

So why are so many raw foodists eating so much fatty foods? What it boils down to is the “If It’s Raw, It’s Healthy” fallacy.

If It’s Raw, It’s Healthy

Many raw foodists will argue that raw fats are much healthier than cooked fats and do not result in such problems as heart disease and atherosclerosis. As long as it’s raw, you can eat as much avocado, nuts, and seeds as you want.

Yes, it’s true that raw fats are much better than cooked fats. Cooked fatty foods have had the majority of the water removed and many necessary micronutrients along with that water (not to mention all the nutrients that are destroyed by the heat alone).

Once fats are cooked, they quickly go rancid and produce harmful carcinogens. The more oxygen that these foods come into contact with, the more rancid they become and the more dangerous carcinogens they produce.

The Problem With Too Much Fat

However, eating an excess of either cooked or raw fats produces a host of problems for the consumer:

#1: Fat takes a long time to digest and it remains in the bloodstream for a long time. When too much fat is consumed, the excess fat in the bloodstream interferes with insulin production from the pancreas. Under normal circumstances, the insulin would attach itself to sugar molecules within the blood in order to carry them to the cells. With the fat in the way, the insulin does not reach the sugar. The pancreas becomes fatigued from producing extra insulin. The blood-sugar level becomes elevated because the sugar cannot be transported out of the blood by the insulin. As you can see, sugar metabolic disorders like type 2 diabetes and Candida are not caused by a lack of insulin or too much sugar. They can be directly linked to an excess of fat.

#2: An excess of fat in the body slows down digestion of other foods that are eaten. Fruit, which normally takes minutes to digest, now has time to ferment inside the body. This results in uncomfortable bloating and gas.

#3: Too much fat in the bloodstream also interferes with the red blood cells’ ability to transport oxygen. A low oxygenated body is a perfect environment for cancer cells to thrive.

#4: Excess fat consumption is linked to numerous physical and mental ailments, such as:

How Much Fat?

Dr. Graham, author of The 80/10/10 Diet and a leader within the raw food movement, advocates a diet of 10% fat or less. Personally, this is the guideline that I follow and recommend as well. Anymore fat than this and it is likely that you are not consuming enough simple carbohydrates in the form of fruit.

10% of calories from fat is surprising to many people. However, many reputable sources (including the world-renowned Pritikin Center) recommend that only 10-15% of calories come from fat.

Many people around the world eat diets low in fat. In The China Study, the longest nutritional study ever conducted, Dr. Campbell studies people living in rural China who eat as low as 6% of calories from fat!

It is not surprising that in these areas you find much lower rates of heart disease, atherosclerosis, breast cancer, etc. compared to more industrialized places like the US and Britain.

On most days, I do not eat any overt fats and on those days I average about 5% of my calories from fat. I’ve never experienced any adverse reactions from limiting my fat intake.

In fact, I have only experienced great benefits since limiting fat, such as weight loss, increased energy, deeper sleep, mental focus, and improved digestion.

Take Action!

You can take action right now by simply limiting your consumption of fatty foods to 15% or less. A good way to do this is to replace these foods with high-calorie, low-fat sweet fruits.

Prolonged in take of insulin sensitive energetic foods not only decreases the immune system in fighting against the forming of free radicals and bacteria and virus invasion, but also elevates immune food sensitive. Abnormal reaction of immune system to foods are not always immediate. it can occur many hours later, leading to weight gain caused by fluid retention as a result of inflammation and abnormal hormone secretion.

Chronic diseases of kidney, liver and heart interfere with distribution of fluid in the body, leading to fluid retention all over the body, especially the eyes and ankles.

B. In traditional Chinese perspective
1. Stomach heat
When food enters the stomach, it is divided to food qi which is absorbed by the Spleen and material is digested and sent down to the intestine where the essence is again absorbed by the Spleen and the waste is eliminated through either kidney or large intestine. A typical American diet is hot and yang in nature, it increases the stomach heat quickly that causes abnormal function of stomach to digest the food quickly, leading to food craving, resulting in weight gain.

2. Spleen deficiency
Abnormal and constant eating with high energetic foods depress the Spleen function in food distribution and transformation, leading to (metabolic products) waste fluid and food secretion filling up the internal organ, bones and body tissues.

3. Kidney deficiency
Since kidney is important in regulating and distributing the body fluid, a typical American diet increases the excessive fluid in the body that suppresses the kidney normal function and block the kidney meridian, resulting in kidney diseases.

4. Blood and qi deficiency
Long terms alcohol drinking damages the liver function in blood formation and the Spleen function in energy distribution, leading to not enough blood for the circulatory system to supply nutrients and oxygen to the reproductive organs. Abnormal function of Spleen in qi distribution also interferes with the lung function in moving qi through the meridian.

4. Blood stagnation

Are you interested in a raw food diet, but don't think you can do it all the time? You don't have to, certainly not to start. Many of us are conditioned to think of food as reward and comfort. We look forward to the end of the day, having dinner with our families, or going out to dinner with friends.

Try eating raw foods throughout the day. If you go to work every day, take carrots, apples, grapes or dried fruit with you to munch on. Does moving to a raw foods diet mean never eating hot food again? No, it doesn't. Sometimes you want something hot. Hot food has always signified comfort for many of us. And on a cold, rainy day, carrot sticks or wheatgrass juice probably won't cut it for most of us.

Most raw food, like our bodies, is very perishable. When raw foods are exposed to temperatures above 118 degrees, they start to rapidly break down, just as our bodies would if we had a fever that high. One of the constituents of foods which can break down are enzymes. Enzymes help us digest our food. Enzymes are proteins though, and they have a very specific 3-dimensional structure in space. Once they are heated much above 118 degrees, this structure can change.  Once enzymes are exposed to heat, they are no longer able to provide the function for which they were designed. Cooked foods contribute to chronic illness, because their enzyme content is damaged and thus requires us to make our own enzymes to process the food. The digestion of cooked food uses valuable metabolic enzymes in order to help digest your food. Digestion of cooked food demands much more energy than the digestion of raw food. In general, raw food is so much more easily digested that it passes through the digestive tract in 1/2 to 1/3 of the time it takes for cooked food.

Eating enzyme-dead foods places a burden on your pancreas and other organs and overworks them, which eventually exhausts these organs. Many people gradually impair their pancreas and progressively lose the ability to digest their food after a lifetime of ingesting processed foods.

But you certainly can steam and blanch foods if you want your food at least warm. Use a food thermometer and cook them no higher than 118 degrees Fahrenheit. Up to this temperature, you won't be doing too much damage to the enzymes in food.

Is there a difference between vegetarian and raw food diets? A raw foodist is a vegetarian, but one who generally is not going to cook his vegetables or fruits. A vegetarian is someone who simply doesn't eat meat, fish or poultry, but only consumes vegetables, pasta, and rice. A vegetarian might eat meatless spaghetti sauce or order onion rings in a restaurant. A vegetarian might consume dairy or egg products; however a vegan will not consume any animal products at all. And a raw foodist is a vegan who consumes only uncooked, unprocessed raw foods. Proponents of the raw diet believe that enzymes are the life force of a food and that every food contains its own perfect mix. These enzymes help us digest foods completely, without relying on our body to produce its own cocktail of digestive enzymes. It is also thought that the cooking process destroys vitamins and minerals and that cooked foods not only take longer to digest, but they also allow partially digested fats, proteins and carbohydrates to clog up our gut and arteries.

It is believed that if food is heated to over 116 deg. F enzymes which assist in digestion and absorption of the food are destroyed. Raw food diet is based on the use of uncooked and unprocessed plant food such as fresh vegetables, fruits, seed, sprouts, grains, nuts, dried fruits, etc.
To derive the full benefit of raw food diet our diet must comprise at least 75 % of the raw and living components.

Raw food is low on saturated fats and components of hydrogenated oils as compared to the conventional diet. It has low sodium content and is richer in magnesium, folate and potassium. It has higher fiber content and it contains phytochemicals which are health promoting plant chemicals. Raw food diet has less fat, less calories.

Raw food has many benefits. It improves digestion and improves skin appearance. It gives increased energy and it reduces risk of heart diseases, diabetes and cancer. It can lead to healthy weight loss.

What can you eat in Raw Food Diet

Criticism of Raw Food Diet

Apart fro nutritional deficiencies of raw food diet, critics are against the basic premise about the foot being unsuitable if heated to over 116 deg F because of destruction of enzymes. Critics argue our bodies do use their own enzymes and are not dependent on enzymes from the raw food.

It is also argued that raw food diet may not be suitable for people in colder climate.
